Winter Wellbeing Elixir recipe

I see a lot of people feeling very poorly at the moment and I'm often asked if I have any tips to help aid recovery. This is my go to and I swear by it every time.

Winter Wellness Elixir 🌿πŸ₯£
A nourishing vegetable broth, perfect for staying hydrated and boosting your wellbeing during the colder months, prep and have in the freezer for when needed. Made from leftover vegetable peelings and loaded with herbs, this recipe is a sustainable and wholesome way to bounce back. It’s great for when you have lost your appetite in the early days of a virus of cold to help aid recovery quicker.

Ingredients:

Vegetable peelings (collected over a few weeks, stored in the freezer once washed):
Onion skins and ends
Cabbage hearts
Lemon peel
Carrot tops and peels
Celeriac trimmings
Garlic skins and cloves
Potato peels
Parsnip ends
Beetroot trimmings
Celery leaves and ends
Herbs:
2-3 sprigs fresh sage
2-3 sprigs fresh tarragon
2-3 sprigs fresh marjoram
Seasonings:
1-2 tbsp honey (optional, for a touch of sweetness)
2 tbsp nutritional yeast (adds depth and umami)
1-2 tsp sea salt, to taste
Freshly ground black pepper
Water: Enough to cover the peelings (around 2-3 liters)
Method:

Prepare the peelings:
Ensure all peelings are clean and free from dirt or mould. Rinse them under cold water if needed.


Simmer the broth:
Place the vegetable peelings in a large pot.
Add the sage, tarragon, marjoram, honey, nutritional yeast, salt, and pepper.
Pour in enough water to fully submerge the ingredients.


Cook:
Bring the mixture to a boil, then reduce to a gentle simmer. Cover and let it cook for 1 hour, stirring occasionally to ensure even extraction of flavours.


Strain:
Using a fine mesh sieve or cheesecloth, strain the broth into a clean bowl or container, pressing the peelings to extract every drop of liquid gold.


Cool and store:
Let the broth cool to room temperature. Portion it into jars or freezer-safe containers. Freeze for later use.


To Serve:

Heat the broth gently on the stovetop when you're under the weather or need a hydrating, warming drink.
Sip slowly, embracing the nourishment and warmth it provides.

Use the strained peelings to make compost, closing the loop on waste and feeding the earth for future harvests.
